No Bake Energy Balls

I love to cook. Cooking has become a very therapeutic activity for me. I also feel like preparing really nutritious and delicious meals for my family is one of the biggest ways I know how to show my love. I want to keep them healthy and happy- always. With that being said, I’m not much into baking. I really have to be in the mood to make something sweet, especially if that means I have to turn on the oven. Am I the only one that hates to use the oven? It’s not a hassle, but it’s such a hassle. Nonetheless I still crave sweets and always look for quick and easy recipes that don’t require baking. So here is my No Bake Energy Ball recipe. Quick, easy, and store in the freezer so you don’t feel obligated to eat the whole batch at once- unless you want to!

No Bake Energy Balls

1 Cup Organic Oats

1/2 Cup Chocolate Chips (I use vegan chocolate chips)

1/2 Cup Sunflower Seed Butter

1/2 Cup Organic Ground Flaxseed Meal

1/3 Cup Maple Syrup (Use a high quality brand with no artificial or natural flavors)

1/3 Cup Shredded Coconut (Optional)

1 Tsp Vanilla Extract (High Quality)

Combine ingredients and mix together in a bowl. Use your hands to form and shape into balls. Place them on a plate or baking sheet in the freezer for 1 hour
